I would like to capture some holiday baking, some marshmallow toasting and some snowfall for our family, I'd like to show them we are thinking of them during the holidays.
I would just love to capture life in motion here at my house. Our families are far away and I know that they would love to see more of our life esp. at Christmas time. From reading other comments it looks like all of us could us this - good luck picking - it's going to be hard!
I'd like to capture our annual name exchange gift opening. We take turns and watch everyone else open their gift. Last year, all four of my brothers and my husband all played "Rock Band" together. I'd love to capture that on video, too :)

I would love to capture my children incognito. It seems whenever I break out the video camera they stop what ever cute thing they were doing and walk over to the camera to see what I'm doing.
I would capture my friends opening their gifts this year. We usually give some really silly gifts so it would be fun to capture their expressions.

I'd love to catch my daughter's face when she opens her bitty baby stuff! She is almost 3 and this is the first year she has really got christmas and the fact it's Jesus's birthday! So Sweet!!

I would love to capture the look on my kids faces on Christmas morning!
This will be our last Christmas with my Grandfather. I want to capture him telling the Christmas story with my kids sitting in his lap just like he did with me when I was a child.
I'd love to video my 3-year-old niece and her baby sister. We have a tradtition where my niece plays Santa and hands out all the gifts -- even the ones 3 times her size! It will be her sister's first Christmas and our first Christmas in their new house. But of course, that is just the beginning. The options are endless as I've never had a video camera before. I'd love to interview my 100-year-old great aunt, after sharing with her the videos of Christmas with the little ones.
I would like to capture my 18 mo old's first real experience of christmas morning with the christmas tree, family, and presents all around her. I also want to capture my 4 year old's excitement at all the gifts from santa under the tree.
